Eitan Segal is a veteran farmer from Israel’s southern region. After traveling to Mexico to train in their cucumber harvesting methods, Eitan returned to Israel to champion the rich, crispy and mouthwatering taste of ripe, seasonal cucumbers. His pickling empire is based on Ashkelon and, using healthy, natural ingredients, Eitan’s pickles have acquired a gourmet reputation among pickling aficionados. Aside from cucumbers, there are also wonderful pickled celery, cherry tomatoes, peppers, cabbage and even radishes and mushrooms.
